3 Beans, An Onion and Green Goddess Eggs





Vegetables.  They're not just for dinner anymore!

Steam-saute' a handful of fresh beans in a couple tablespoons of water and one tablespoon of butter, in a small covered pot, with the white part of of the onion.















Melt a little butter in a non-stick pan.  Cook the green part of the onion a minute or two.  Add the eggs and stir gently.  Flip once, salt and pepper to taste or drizzle with a little Thousand Island, Ranch or Green Goddess dressing. . .Lin
