Beef Rib Stew






1-1/2#  leftover boneless beef ribs
1  can petite diced tomatoes
Simmer the meat in the tomatoes and juice for an hour or two.  Add a little vinegar and Dijon mustard if you want or some water if needed.








4  med  carrots
1  sm    head of cabbage
1/2 sm  onion
1  can   light red kidney beans
1  can   black beans

Add chunks of carrots, cabbage and chopped onion.  Simmer another hour, add drained-rinsed beans the last 5 minutes.  Serve with cornbread or biscuits. . .Lin
