In a flat pan, pour extra virgin olive oil and some vinegar over the ribs about 3/4c of each. Sprinkle with a rub or seasoning of your choice. I used garlic pepper this time. Marinate a couple hours, turning a few times. Bake, covered, at 250° for an hour and a half. Finish on the grill, browning basting with marinade and cooking juices for 15-20 minutes.
Potatoes and Onions
1 lg sweet potato
fingerling potatoes scrubbed
1 lg onion
Peel the sweet potato and cut into chunks. Put in salted water to prevent browning.
Drain, put in a pouch of heavy foil with butter, sea salt and pepper. Add the other potatoes and onion cut in large chunks. Cook open over medium heat on the grill, turning in the butter-salt-pepper mixture until the sweet potatoes are done the way you like them. 20-30 minutes.
