Chicken-Couscous Burritos


1/2 c  dry couscous - plain or seasoned
1    c  water or chicken broth
Mix and simmer until liquid is absorbed 10-15 minutes


Add:
1/3    can of refried beans - plain or flavored 


4 oz   chicken breast - chopped in small pieces
1 T    olive oil
3       mini peppers
6       cloves of garlic
1/2    med. onion


Saute' chicken and chopped vegetables in olive oil.

Combine couscous-black bean mixture, with the cooked chicken and vegetables.  Spoon onto a tortilla, top with cheese.  Serve with chopped avocado, tomatoes or salsa and some sour cream.


Pairs nicely with a cool, mixed green salad or chopped cucumbers.  Makes 3 big burritos. . .Lin
