September Chowder





1  sm    red onion
1  med  sweet onion
1  lg      clove of elephant garlic
3  ears of corn - cooked and cut off the
    cob - strain and save cooking water
2  stalks of celery with tops
1  red mini pepper
3  carrots
5  med  red potatoes
1/2 bunch Russian kale - not shown






Quarter and thin-slice onions and garlic.  Saute' in a little extra virgin olive oil and 2T butter till translucent.  Add garlic pepper, sea salt and 1T pure Maple syrup.  Continue cooking and stirring until mixture is brown, fragrant and caramelizing.






Quarter and thin-slice:  potatoes, pepper, carrots, thin sliced celery, corn and chopped kale.  Stir and add 3-4 cups of corn water.  Simmer an hour.  Add 1T ± each:  beef and chicken soup base.


Serve now or add half and half and some sour cream.  Stir, heat again and serve.  Goes well with cornbread, biscuits or crusty bread. . .Lin
