Eagle Brand Fudge Recipe

Since making fudge at Christmastime seems to be a tradition for so many, I have to post this!  My mother-in-law made only this recipe each year.  It produces a smooth, as opposed to a sugary, type of fudge.  It's super simple and to die for!  If you reduce the amount of chocolate chips to 6-8 oz. — it's the best hot fudge sauce your favorite vanilla ice cream will ever see :o)

3c 18 oz. semi-sweet chocolate chip
1   14 oz. can Eagle Brand Sweetened
      Condensed Milk
      a dash of salt
1-1/2t  real vanilla extract

Butter an 8-9 inch square pan.  Melt chocolate chips with the milk and salt in a heavy pan.  Remove from heat and stir in vanilla.  Pour-spread in the pan.  Chill 2+ hours.  Cut into squares.  MMMMmmmm!


NOTE: I followed the recipe exactly and was not happy with results. Flavor was too dark (which could be fixed by using 1/3 milk chocolate and 2/3 semi-sweet chips) but the texture was NOT the way I remember it. Too heavy and chewy. Strange! - - - Lin
