St. Patrick's Day Dinner

1 Corned Beef Brisket - remove or leave fat on
3 carrots - cut in big chunks
1½c celery - sliced
½ large red onion - cut in wedges
½ head green cabbage - cut in wedges
5 Yukon Gold potatoes - scrub and leave whole

Simmer the Corned Beef, covered, 2-3 hours in enough water to cover roast, with spices included in package. After 1½ hours, add carrots and celery. After 2 hours, add remaining vegetables and continue to simmer another half hour. . .Lin
