Three Onion Shrimp Scampi




1 lg onion - chopped 
1 lg clove Elephant Garlic - or
   (5-6 regular cloves) - chopped
¼ c butter
2-4T extra virgin olive oil
1 t Pampered Chef's 'Citrus Basil Rub'
1 T lemon zest

Earlier in the day, combine all the above and saute' about 5 minutes. Turn off heat and cover pan.


6-8 long stems of chives - snipped
Juice of ½ a large lemon
12 oz frozen thawed shrimp

About ½ hour before eating, add the above ingredients to pan and simmer about 5 minutes. Serve over angel hair pasta cooked according to package directions. If the scampi is too thin, add a couple tablespoons of the starchy cooked pasta water. This will help thicken it. . .Lin
