Truffled Chicken And Onions



Partially thaw a skinless-boneless chicken breast.  Slice it thin, across the grain, when it's about as frozen as a popsicle.  Finish thawing then saute' 3-4oz / person in a little truffle oil with half a chopped onion.  Serve with potatoes, vegetables, a salad, etc.














Tonight I had mine with Italian green beans and hearts of palm.  Ready in 10 minutes, start to finish. . .Lin
