Quick Fresh Vegetable Soup




3 Yukon gold potatoes
1+ onion – I started with 2 but the outer
parts of one was too soft so I used
the center and tops that had sprouted
3 small carrots
2 stalks of celery
Lovage or celery tops
1 can petite diced tomatoes


Saute' finely chopped onion and cubed potatoes in a little butter. Once a little browned, add about a cup of water. Simmer 10 minutes or so to bring out the flavors then add chopped carrots, celery, tomatoes and lovage. Check the flavors adding a little chicken soup starter or Rosemary Seasoning if needed. Simmer another 10-15 minutes. Serve with crusty bread. . .Lin
