1 sm Vidalia onion
¼ red sweet pepper
a big handful of baby spinach
1-2 fresh free-range eggs
In a non-stick pan, saute' sliced onion and pepper a few minutes. Add rough chopped spinach, cover and continue to cook-steam over low heat until the spinach wilts. Add lightly beaten egg, cover and allow to cook a couple minutes to set the eggs enough to flip. Continue to cook another minute or two. Transfer to plate, sprinkle with a little shredded cheese, serve with toast, fruit or fresh vegetables.
A variation for a fun way to get your child to eat more vegetables. —> Chop the spinach, quickly in a food processor, add eggs and pulse just untill blended. Pour over ham cubes that have been lightly browned in a non-stick pan. Stir slowly until the egg-spinach mixture is set. Viola'! Now, don't be surprised if you hear them say:
