2-3 oz shredded Cheddar
3 sm *round sweet-hot
peppers
2 med dill pickles
1 sm Vidalia onion
2-3T mayonnaise
*these are bright red,
about 1½” diameter and usually found near the bulk olive section
of the deli.
Chop first 5 ingredients, add mayonnaise, mix and spread on a rice cake. If you'd like to melt this a little in the microwave, use good quality, crusty Italian or French bread instead. Rice cakes get soggy-chewy when heated.
This goes together quick for those days when you're all of a sudden just out of energy. Add a big glass of icy-cold Seltzer with lemon. Ahhhh. . .Lin
