Smoked Turkey-Cheddar Melt




8oz. deli-sliced smoked turkey
3 sweet, spicy dill or regular dill pickles
3oz. shredded sharp cheddar
1T± spicy brown mustard
½c± real mayonnaise
~ finely chopped onion or celery – optional


Chop the turkey (ham or beef) and pickles using a food chopper. Grate in the cheese (cheddar or Swiss) then mix together with mustard and mayonnaise. Put a big spoonful on top of bread or rice cake. Put under the broiler or microwave a short time until all is melted together the way you'd like, a lot or a little. Serve with fruit or vegetable slices. Makes about 5 sandwiches. . .Lin

Quick-Flavorful Sandwich Spread

2-3 oz deli smoked turkey
2-3 oz shredded Cheddar
3 sm *round sweet-hot peppers
2 med dill pickles
1 sm Vidalia onion
2-3T mayonnaise
*these are bright red, about 1½” diameter and usually found near the bulk olive section of the deli.

Chop first 5 ingredients, add mayonnaise, mix and spread on a rice cake. If you'd like to melt this a little in the microwave, use good quality, crusty Italian or French bread instead. Rice cakes get soggy-chewy when heated.

This goes together quick for those days when you're all of a sudden just out of energy. Add a big glass of icy-cold Seltzer with lemon. Ahhhh. . .Lin
