Raw Corn and Kale Salad

2 ears of fresh, raw corn
1-2 big leaves of fresh kale
1 tomato - chopped
1/2 Vidalia onion - sliced 
1 pickling cucumber - sliced
cilantro or flat leaf parsley - sliced
1/2 can pinto beans drained - rinsed

Husk and wash the corn.  Cut kernels off the cobs, slice-chop the kale and combine with all the remaining ingredients in a medium bowl.  Toss and serve with Lemon-Oil Dressing.  This makes one very big salad or two smaller dinner salads.

The raw corn and kale is new to me.  My niece has recently made a raw food diet-lifestyle change and directed me to some youtube videos on the subject.  An interesting concept worthy of some attention.  I think you'll be seeing more of these recipes here. . .Lin
