Zucchini And Friends



1 light green round zucchini
1 yellow zucchini
2 green zucchini
½ lg red onion
4 cloves garlic, fresh if possible
1c chunky pasta - shown is corn, beet, spinach,
                                     bell pepper - gluten free
½-1c salsa or diced canned tomatoes






Cook the pasta until partially cooked, drain and rinse. Cook the sliced-chopped zucchini in 1-2T butter for about 5 minutes, stirring to keep zucchini from sticking. Add sliced onion and minced garlic and continue cooking another few minutes. Add pasta and salsa or diced tomatoes. Combine, transfer to baking dish. Finish cooking-baking, another 15 minutes or so in a 325° oven. Top with fresh grated cheese. Cover to let the cheese melt before serving. . .Lin
