1-2 large broccoli 'crowns' broken into florets
2T solid virgin coconut
oil
1/3c water
Combine in a large
non-stick skillet and saute' until broccoli is bright and still a
little crisp, then add:
1/3-½c almond butter (or
peanut butter)
1T tamari or soy sauce
½-1t curry powder
15 med. cooked shrimp per
person
½c raisins of chopped
prunes – optional
sea salt – a pinch of
cayenne pepper if needed
Continue to saute'-simmer, covered until broccoli is done – about 5 minutes. Raisins / prunes give a nice balance of sweetness to the salty-spicy elements. Serve over rice, rice noodles or just as is in a bowl. Makes 2 large servings. . .Lin
