Raisin Chicken Salad Wraps




1c golden raisins
1 sm. Vidalia onion
4 sm. celery stalks
¾ c slivered almonds
12.5 oz. canned chicken
mayonnaise
Red Butter Lettuce leaves


Cover the raisins with water and microwave for 1 minute in a custard cup. Chop the onion and celery then combine with the almonds and the drained chicken. Add raisins with the hot water and enough mayonnaise to hold it all together. Serve on lettuce or use the lettuce leaves as wraps.

Makes a great lunch for 2-4 people. . .Lin
