1 lg. onion –

* Cook chopped sausage in a
little butter a few minutes, until the whole house smells wonderful.
Add onion and reduce heat. Cook a few minutes then add drained dried
potato pieces. Cook on medium heat until potatoes are done the way
you like them. Serve with eggs and / or cantaloupe slices. . .Lin
* I blogged this as I was cooking. It actually needed to be modified a bit. At the very end I added some olive oil and balsamic vinegar. Then to create a sauce I stirred in about 2/3c sour cream and a little A-1 Steak Sauce. This worked beautifully but may not be necessary for your taste if it doesn't appear too dry.
