2/3c spelt
2/3c chopped
celery heart
1 sm onion –
chopped
1 garlic
clove – minced
1 can black
beans – rinsed/drained
1c plain
Greek yogurt
fresh ground salt and pepper
1-2T balsamic vinegar
chopped cilantro - optional

A friend gave me the spelt and basically said, see what you can do with this. So this one's for you Sandy :-)
The night before you want to make this salad, rinse and sort spelt to be sure there are no tiny stones in it. In enough water to cover, bring to a boil. Let stand 10 minutes, rinse and repeat several times then leave in cold water overnight. In the morning bring to boil again, cook for 5 minutes, rinse one final time then drain and put into a medium bowl.
To the
spelt, add remaining ingredients, toss and chill several hours to
blend the flavors. This is an example of a perfect vegetarian dish.
The grain and bean combination provides all the required amino acids
to create a complete protein. . .Lin
