ABC Salad – Avocado, Beans and Corn

1 can of black beans

1 can of corn

1 can Rotel tomatoes
1c chopped Kalamata (red) olives

½–1t good quality chili powder

½–1t good quality powdered cumin

juice and zest of a small lemon or lime

1 large Vidalia onion – finely chopped

2 barely ripe avocados

a little buttermilk ranch dressing

~ Drain the canned ingredients, rinsing the black beans well, then combine in a medium mixing bowl with olives, spices, citrus and onion. Just before serving, add chopped avocado and ranch dressing. Toss and serve with chips as a dip or as is as a salad. . .Lin

~ As with so many creative cooks, Torrey would have a hard time recreating this recipe. She takes some of this, a little of that, and the results were awesome. Be creative! Be adventurous! Pitch that recipe and go with your instincts :-)
