Big Bowl of Beautiful Beets

5 beets
1-2T butter
1-2T brown sugar
fresh ground salt & pepper

Simmer the beets, in enough water to cover them, for 20-30 minutes or until a fork inserted to the middle comes out easily. Empty water and replace with icy cold water. Slide the beet skins off and allow to cool in the water until they're easy to handle.

Slice or chop into a pretty glass bowl. Add remaining ingredients and toss. Serves 2-4. . .Lin
