Quick and Easy Nutty Zucchini




5 small zucchini – cut diagonally
1 medium onion – chopped
1-2T extra-virgin olive oil
1-2T good quality Balsamic vinegar
1 14.5oz. can diced tomatoes
1c mixed nuts

Saute' the zucchini and onion in the oil and vinegar for about 5 minutes. Cover and simmer another 5 minutes then add the tomatoes. Bring back to a simmer, cover and cook an additional 5 minutes. Add the nuts, mix in, cover and heat back to simmering once again. Transfer to a serving dish.

If you'd like, sprinkle with Parmesan or Romano cheese. Makes 2-3 servings as a Vegetarian Main Dish or 4-5 servings as a Side Dish. . .Lin
