Lately there is a lot of buzz about fermented food. It's something that should be part of all our diets. It might take a little digging to find commercial fermented foods locally, or the recipes, if you want to make your own. Sauerkraut and Pickles are a good place to start. Pickles, however, are traditionally made with a vinegar brine. Fermented Pickles are made with a salt brine. I'm not ready to commit to making my own yet, but found some to try, at our organic grocery store. They're a little different, but considering the health benefits, won't take too long to adjust to.
