MED-AT Fusion

MEDiterranean
ATkins

.   .   .   .   .  FUSION  .   .   .   .   .

Over the years I've had no trouble maintaining my weight or losing a few pounds to get back to around 130# which wasn't bad for 5'3" in my early 60's.

That all changed in my mid-'60's when I started to gain, and it seemed my metabolic rate crashed.  I also developed some serious health issues, necessitating being put on prednisone, the pain-taker, powerful-anti-inflammatory, make-you-hungry - hungry-all-the-time - eat-everything-in-sight medication.

At my highest, I'm sad to admit, I hit 197#  I've managed to drop 22# while tapering down and off the medication, putting me right at 175#, but my goal is still about 35-40 pounds away.  My metabolism is no longer my friend, so I know it won't be as easy as it once was. . .  I've stayed on the nutrition track, reading a lot and generally, becoming more confused the more I read.  I heard, read or saw something recently that was very convincing yet shocking in regard to rice.  Basically saying white rice is actually better for us than brown or other less processed rices! 😧 If I can find it again, I'll post it here.

People I'm close to swear by Keto, but when your daily intake is supposed to be 5% carbohydrates, 20% protein, and a whopping 75% fats. . .okay, healthy fats, but nonetheless. . .I don't think that's a good fit.  I lost a lot of weight, quick, one year on Atkins, but that also has it downsides.  More and more lately, I'm hearing again about The Mediterranean Diet.  What I've decided to do, personally, is combine the best of both of these, but basically it'll be following a plan that uses less grain than the Mediterranean and less meat and fat than the Atkins.  Here's an interesting website - OLDWAYS as well as their Facebook Page - Oldways FB

Wanna come along? 😊 If so, stop back often and search "Fusion". . .Lin

Bacon,Bacon,Bacon!!

Years ago, I lost 40# in 3 months by following the Atkin's Diet.  It worked well for me, and if I remember right, I felt good during that time, but I gained back the weight I had lost, within a year.  I had gone from 152# - an all-time high for me - down to 112# which was WAY too low!  It was a quick fix, not a sustainable life-style change.  The main principles of Atkin's are, low-to-no-carbs, lots of healthy vegetables, salads, meat, fats and water.  Gotta drink quite a bit of water to push the toxins through.

Recently, I feel I've sort of rediscovered bacon, which was a big part of my Atkin's experience.

I found a bag of fried, crumbled bacon in one of my grocery store adventures a while ago, but sadly, can't remember which store.  A 2# bag was right around $12.00.  I used it in several breakfast egg bakes, a potato salad and a potato-corn chowder.  Then a couple months ago, I found 2# of locally raised bacon for just over $6.00.  Well now. . .  A project!

Projects are always money-saving, right??  Well, sadly, in this case, I discovered that 2# of raw, smoked bacon, after cooking, water evaporation, fat draining, only yielded. . .are you ready for this? . . .8oz. of crispy-cooked bacon!!

So, for me to duplicate that $12.00 2# bacon bag. . .I would need 8# - $26.00 worth of raw bacon and I'd be left with a very smokey kitchen!!!  Time to talk to some grocery department managers and find those precooked packages of wonderful, crispy bacon again!!  However if you're up for it, somehow, make your own! . . . An Alkaline Food Pyramid

THIS  IS  AN IMPORTANT  POST!

When examining all the various diets, lifestyles and food plans, THIS is the one I keep coming back to.  I think it makes the most sense of any I've seen.

Disease doesn't survive in an Alkaline Environment. . .An Acidic Diet is one that promotes negative health and FEEDS disease cells!  Check it out for yourself, Google: "benefits of alkaline diet" as well as "dangers of an acidic diet."

Kitchen Tips and Tools. . .

I was cleaning up after breakfast just now and realize I have some really special, favorite things in my kitchen that I couldn't be without.  Sometimes the simple, inexpensive things are the best, or at least I've found that to be the case.  I thought I'd share a couple of them with you here.

Years ago, a good friend bought me some very expensive, knives as a Christmas present.  You'd know the name if you're A Foodie.  Starts with a W and their little symbol is sort of a pitchfork trademark.  He bought me a chef's knife, what I call my Tomato Knife, and a small paring knife.  The total for these 3, back then, was right around $300.00.  Today they go for closer to $400.  I cherished them for a couple years before realizing - They just weren't all that great!  They didn't sharpen well, nor did they hold their edge.  Around that time I was in a fabulous Asian Market about an hour away from my home in Northern Wisconsin.  I found myself in the knife aisle.  It was there I discovered KIWI knives!!  Hooray!!  To duplicate the 3 different, expensive knives, from my friend, I probably spent $25.00!!  Today, the ones I currently have are, a set of 8 of the steak knives, which I also use as paring knives.  They're on the far left - #501.  I also have 6 of the Chef's Knives - 4th from the left, #171.
~ ~ ~ ~ Pair these with an inexpensive 2 or 3 slot sharpener and you're good to go for YEARS!! ~ ~ ~ ~

Another wonderful, recent find, is this amazing German invention!!  You can read about these here SKOY - They're everything they're claimed to be - and more.  While available online, if you're lucky enough to have a local kitchen store, I'd encourage you to shop there.  I bought a pack of 4 of these at Duluth Kitchen Co. for under $9.00.  I'm so fortunate and thankful to have TWO Amazing Kitchen Stores here!  I buy all my cooking and baking tools, appliances and utensils locally now, and feel the need to support them in any way I can.  In fact, tonight, I'm heading over to The Blue Heron for another great cooking class led by one of our Talented Local Chefs, teaching us about Soups Of The World!  With taste-testing of each to follow, of course!

Last, for today, is another plug for an Excellent Duluth, MN business.  The Epicurean Cutting Board folks originally lived in a house on Belmont, where my daughter and her fiance', Scott, previously lived, and Scott currently owns as a rental!  So, there's been a lot of creativity happening under that roof over the years!

These cutting boards are amazing!  At The Blue Heron they have a couple huge restaurant size they use in our classes.  I keep lusting after them, but actually, my favorites of theirs are their simple, thin Camp Series boards, shown in this photo.  Here is a link to the website, telling all about their ecologically sound, environmentally friendly kitchen tools!  EPICUREAN

Buy yourself, or a foodie you love, several! 😊  As always. . .Be Creative & Happy Cooking To You!! . . . Lin

Information - Books and Tools

Oh my! — It's like Christmas here today!

The Mailman just brought me two packages.
As most of you know, I love to create recipes.  My blog is made up of about 95% my original concoctions and the rest are recipes by others - clearly identified as such - and informational posts.
My excited 'Christmas in January' face
This cookbook was recommended to me by a Facebook friend.
We both have odd auto-immune, arthritis conditions
that have seriously impacted our lives.
I expect to get lots of good info, tips and details,
regarding what they call 'action plans.'
I'm sure the recipes will be ones I'll also share,
either as they are or with my modifications.
Yea!  Good Reading about Good Food!  😋 A double win!!

I'm also not a huge fan of single-purpose gadgets.
However, I have a condition called Essential Tremor which has seriously impaired
my chopping,and slicing abilities.
Sad, since that's one of my favorite part of cooking.
It's a time I can be precise, think about my game plan for the food
and ponder other ingredients or changes I want to make in my original idea.

So, since I started becoming a danger to my poor fingers,
with bad shakes and super sharp knives. . .I have to make an adjustment. . .

Enter. . .taa daa. . .The Freshware Chopper and Mandoline Slicer!!
I did my homework on this and found it to be very highly rated as well as an excellent value, being a dual purpose tool.
After using this a while, I'll give some feedback
on how it performs and if I'm feeling it was a good addition
to my crowded kitchen cabinets.

Happy Cooking Everyone 💗. . . Lin

More Reasons To Consider A Plant Based Diet

Some convincing arguments for changing to a plant based diet.

In so doing, avoiding the meat, dairy and egg industry and the cruel, unhealthy, inhumane way animals are raised in large-for-profit corporate farms. Animals who are often trucked to the packing plants, sick and scared. All the negative chemicals that releases into this meat can't be good for us. Not to mention the arsenic and antibiotics these animals are force fed in attempt to keep them healthy, just long enough to get them to the meat department of our local groceries. Such a sad, horrible life for these sweet creatures. These are cows and pigs, in particular, that, in good living conditions, give and receive love, and have personalities similar to our domestic pets. Yes, compelling things to ponder. . .(there is more than one great video here.)

Information. . .

I found some great food related information
while checking my internet sources, over morning coffee.

This first one is funny and has lots of good ideas.
I'm making a quiche' right now so I used the garlic peeling tip.
In 10 seconds you can get the garlic to just pop out of their skin.
Wrap them first in a kleenex or paper towel.

This one has great nutritional information about all the properties of okra.  Okra!  Who knew?

Last = Carrots.  One of my all time favorite vegetables.

Hope you're all having some good cooking adventures.
As always, if you have comments or questions, please contact me.

Interesting 'food' for thought.

I've heard it said that:

"The only thing cow's milk is good for - is -

. . . . .Baby Cows. . . . ."

Almond and rice milk are good alternatives.

Goat cheese is great.

Keep an open mind.

The Food Network

Do you get The Food Network on TV?

I do and find I have to limit my viewing time or I'd never get anything else done.  My three favorites are Barefoot Contessa, Pioneer Woman and Southern At Heart.

Lately there is a lot of buzz about fermented food.  It's something that should be part of all our diets.  It might take a little digging to find commercial fermented foods locally, or the recipes, if you want to make your own.  Sauerkraut and Pickles are a good place to start.  Pickles, however, are traditionally made with a vinegar brine.  Fermented Pickles are made with a salt brine.  I'm not ready to commit to making my own yet, but found some to try, at our organic grocery store.  They're a little different, but considering the health benefits, won't take too long to adjust to.  Happy reading and discovery!
