½c 4% cottage cheese
2T grated parmasen cheese
a sprinkle of Mediterranean salt
a big pinch of smoked paprika
1t dill
1 big carrot
1 sm. kohlarabi
Mash the first group of ingredients in a small bowl. Scrub the carrots, peel the kohlrabi, slice into sticks, or cut in thin wedges. I microwaved the vegetables for about a minute just to take a little of the raw edge off. If you want, you could put a little ranch dressing powder in the mix to give it a little flavor kick.
