A Norwegian Crisp Bread Breakfast


This is sort of a twist on Avocado Toast, but SO much healthier and better tasting. It's great anytime of the day, not just for breakfast. It's also under 500 calories at about 325 without any sides. 


This comes together quickly. Layer everything, then microwave for 30 seconds. I made some quick blanched-cold-shocked tomatoes the other day, so I peeled this one and used about half of it. If you've never tried these crisp breads, there are several types available on Amazon, probably also at your local, natural food stores.  Next time I make this I'll mince the onion, chop the tomato, mash the avocado all together.  Spread this over the base then put the cheese on last.

Five-Minute Breakfast

If you hard boil a few eggs for the week, it's always easy to build a quick breakfast around them.

Chop up a hardboiled egg.  (Crack them well, then peel under a stream of running water.  When the water gets between the shell and egg, they peel much easier.)  On one piece of Ezekiel Bread, mash avocado slices.  Sprinkle on some chili-lime seasoning and a drizzle of ranch dressing on the egg.

Avocado Egg Spread

1-2 ripe avocados
2 hard boiled eggs
3-4T finely chopped onion
½-1 jumbo garlic clove - minced
enough mayonnaise to hold it together
½t your favorite seasoning blend
fresh ground black pepper

Chop and mash all the ingredients together.  Spread it on grainy, toasted bread, a sun-dried tomato rice cake or, as in my case, my favorite new discovery, a crispy, thin corn cake.  Oh these are so good!  I found them at our local Co-Op.  I'm not a big conventional breakfast-food person, so this was breakfast today. . .Lin
