A Fresh and Crunchy Egg Bowl Breakfast


I think my body needed protein today.

I woke up thinking EGGS!
Perfect since I have a couple dozen pasture raised; of excellent quality, from the Farmer's Market and an Asian Grocery in the cities; I simmered 9, chopped 3, gave one to my pup Oliver, mixed with some homemade chicken bone broth for a 2nd breakfast 😊

To my two I added; chopped avocado, a small tomato, green onion, a handful of pistachios and 3 Brazil nuts; for selenium that our thyroids need. Some frozen peas would also have been really delicious!

Then a little drizzle of my spicy current mayo-sour cream pepper-garlic-dill dressing and it was ready. Quick, easy and SO good! . 😃. .Lin

Fruit and Vegetable Green Smoothie



When your immune system isn't what it should be, it seems you're constantly fighting off some virus. That's how I woke this morning, feeling icky once again. . . I had a bowl of the turkey-wildrice-vegetable soup I made this weekend, but my body was still yelling for something more. Something fresh. 

Alrighty-Then. . .time to fire up the blender.

I used everything, as shown, except for cutting them up.

1 big carrot
1 stalk celery
1T ground cinnamon
mini English cucumbers
a piece of candied ginger
strawberries - with green tops
the top half of a dark green Romaine
3/4-1c Chobani whole milk plain Greek yogurt
a big splash of fruit juice




This is why I'll never own another juicer. . .everything in the first photo ended up pulverized, into my glass.

With a juicer, you throw away at least 3/4 to get a minuscule amount of the clear extract of the fruits and vegetables. 

There's so much good fiber that never makes it into your body, compost or muffins since most people just pitch it.

Tossed Salad with Strawberries

More and more lately, tomatoes are ending up simmered in my kitchen.  In one way, that's a healthier option, since the Lycopene in them is released when they're cooked. Since my Roma's aren't ripe yet. . .it's just another reason to substitute some beautiful strawberries in my salad today.

This began with a lettuce mix of chopped: romaine, green cabbage, spinach, celery, carrot, Vidalia and green onion.  Once the lettuce was washed well, and spun dry I tossed in all the other sliced, clean, dry vegetables that will keep nicely, covered in the 'fridge for up to 5 days.  


For this salad, I combined a big handful of the lettuce mix with cilantro, crumbled feta cheese, macadamia nuts, 4 big strawberries, half an avocado, a good shake of Everything Bagel Seasoning and some Raspberry Vinaigrette dressing.

This was quick, easy, healthy and delicious...Lin

Steamed and Raw Vegetable Salad



½ sm. head of cauliflower
½ sm bunch of broccoli
3 med. carrots - scrubbed

½ tight, heavy head of iceberg lettuce
3 mini English cucumbers


Slice the carrots diagonally in thin-medium-thick slices.  Put in a 2qt. pot with a little water.  Steam for about 4 minutes.  Add the cauliflower and broccoli and steam another 4 minutes.  Immediately drain and rinse in cold water, then put everything back into the pot and cover with very cold water to chill 5-10 minutes.  Drain in a colander, shake occasionally.  Put paper towel in the bottom of the colander and let stand a few minutes longer, until they're well dried.

Cut the lettuce into cubes, break them up a little, wash in your salad spinner.  Spin-dry well, then transfer to a large bowl.  Scrub and partially peel the cucumbers.  Slice lengthwise twice, then cross cut into ¼" quarter pieces, and add to the lettuce.  Once the steamed vegetables are cool and dry, toss them with the fresh vegetables, add tomatoes, croutons, grated cheese, etc.  Top with your favorite dressing.  This is a nice color and texture change from a regular tossed salad. . .Lin
