Shrimp and Sautéed Vegetables


3 baby red potatoes
2T EVOO
a good sprinkle of my rosemary seasoning.

Sauté until the potatoes starting turning translucent.
Add the peas and whole or halved shrimps.

1c frozen peas
1/2 lg. purple shallot
7 big Argentinian red shrimp

Stir and continue to cook; covered,
just a few minutes, over low heat; until the shrimp is done.

I had my family over for lunch after church and thought that might be it for me regarding food for the day. Later I got hungry again and this came together fast.

I had leftover vegetables so this morning that + an egg became a really great breakfast. . .Lin

Quick Shrimp and Rice Bowl

⅓ c bamboo rice
1 c fresh cold water
1-2 T butter

¾-1 c frozen peas
6 big shrimp

Cook the rice, butter and seasoning slowly, until the water is almost gone.  Add the peas and cut up shrimp.  This was one huge serving.  With a big mixed vegetable salad, it would easily feed two people...and...it only took a half hour, from start to finish.

Don't Forget The Beans!!!

Beans are a miracle food that have had a bad image for way too long.  They're an excellent source of fiber and protein.  Black beans, red beans, black-eyed peas, great northern, navy, pinto, garbanzos, they're all wonderful.  If you don't like to rehydrate and cook with dry beans, no problem.  Use canned.  After all, cooking isn't always about reinventing the wheel.  Shown here is a can of green beans, garbanzos aka: chickpeas and some frozen peas.  This went together in just a few minutes.  Heat and serve with a dab of butter, salt and pepper.
